Grilled Skirt Steak with Almond Sauce – Father’s Day

Fire up the grill and make Father’s Day a little more memorable with Grilled Skirt Steak with Almond Sauce. This recipe combines quick-cooking steak with a rich, herb-forward sauce that...

Whether Father's Day brings the whole family together or simply creates an opportunity to spend a few extra hours outside, Grilled Skirt Steak with Almond Sauce is a great way to put a smile on Dad's face. Time spent around the grill encourages conversation, slows the pace of the day, and creates space to enjoy good company without turning the meal into a complicated production. This recipe fits naturally into that setting, offering bold flavor while keeping the preparation approachable.

Skirt steak works especially well for outdoor cooking because it responds quickly to high heat. A hot grill creates a flavorful crust while keeping the inside tender and juicy. Since the cut cooks in just a few minutes per side, you have more time to enjoy the people around you rather than spend the afternoon managing the menu. After a short rest, the steak slices easily and serves well as either the centerpiece of a meal or part of a larger spread.

The almond sauce adds a different layer of flavor without overwhelming the beef. Nuts bring richness and texture, while fresh herbs, garlic, and citrus help keep the sauce balanced and bright. Together, those ingredients complement the grill-charred flavor and create contrast in every bite. The result feels substantial enough for a Father's Day meal while remaining easy to prepare for a relaxed afternoon outdoors.

Outdoor cooking often becomes less about the food itself and more about the experience surrounding it. A quality grill, comfortable seating, and a welcoming backyard encourage everyone to linger a little longer. Grilled Skirt Steak with Almond Sauce supports that kind of atmosphere, offering satisfying flavor and a simple approach that leaves more room for conversation, laughter, and making Father’s Day one to remember.

Serves 4

Grilled Skirt Steak with Almond Sauce Ingredients

  • 1 ounce ancho chiles
  • boiling water
  • 2 large garlic cloves
  • 1/4 cup toasted almonds
  • 2 tablespoons almond butter
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon extra virgin olive oil plus more for the pan
  • cumin and freshly ground black pepper
  • 2 pound skirt steak

Grilled Skirt Steak with Almond Sauce Directions

  1. In a heatproof bowl, cover the anchos with boiling water and let stand for 15 minutes. Drain the chiles, remove the stems and seeds, and coarsely chop. In a food processor, pulse the chiles and garlic a few times. Add the toasted almonds, almond butter, vinegar, and 1/4 cup warm water. Process until it is a coarse paste, then stream in olive oil and add more hot water until the desired consistency is reached.
  2. Preheat the grill to medium-high heat. Sprinkle steaks generously with cumin and black pepper. Grill for about 3 minutes per side. Let the steak rest, then thinly slice across the grain and serve with sauce.
  3. Use any leftover sauce as a dip for veggies, chicken, or whatever you like.
