Alfresco nights are back, and Bacon Burgers on Brioche Buns give you an easy reason to fire up the grill. Whether for a laid-back weekend cookout or a casual evening with neighbors, this recipe fits naturally into outdoor cooking. Hearty, satisfying, and built for the grill, these burgers keep the focus on spending time outside rather than managing a complicated meal.
Grilling pulls everyone to the backyard. While the patties cook over direct heat, the smell alone draws people in. That shared presence around the grill is what outdoor cooking does best—it keeps things relaxed and social without any extra effort. Flames do the work, and you stay present with the people around you.
Each beef patty is seared directly over the grates, locking in juices while forming a firm, flavorful crust. Crispy bacon adds a salty, smoky contrast to the rich meat. Buttery brioche buns toast quickly on the grill, picking up just enough char to hold everything together without going soft. Classic toppings—lettuce, tomato, onion, and your preferred sauce—layer on flavor without competing with the burger itself.
For a quiet weeknight, two or three patties come together fast and pair well with a simple side. When feeding a larger group, the recipe scales without adding coordination. Guests can build their own burgers, which takes pressure off the cook and makes the meal feel more interactive. That flexibility suits any size gathering.
Outdoor cooking works best when the process stays simple, and the food tastes great. These burgers deliver on both. Simple prep, solid flavors, and time well spent around the grill—that's what backyard living is all about.

Serves 4
Bacon Burgers on Brioche Buns Ingredients
- 2 medium red onions (thinly sliced)
- 6 tablespoons extra-virgin olive oil (plus more for brushing)
- ½ cup mayonnaise
- 2 tablespoons fresh lemon juice
- Salt and freshly ground pepper
- 8 slices of thick-cut bacon (12 ounces)
- 3 pounds mixed ground chuck and ground sirloin
- 12 ounces brie (sliced)
- 8 brioche burger buns (split)
Bacon Burgers on Brioche Buns Directions
- Preheat the oven to 400°. On a rimmed baking sheet, toss the onions with two tablespoons of olive oil and roast until softened, about 20 minutes.
- Meanwhile, in a small bowl, whisk the mayonnaise with lemon juice. Gradually whisk in the remaining 1/4 cup of olive oil, then season with salt and pepper.
- Cook the bacon over moderately high heat until crisp in a large skillet. Drain on paper towels and break each strip in half.
- Light a grill or preheat a grill pan. Form the ground meat into eight patties. Season generously with salt and pepper and brush with olive oil. Grill over moderately high heat until well-browned on the bottom, 5 minutes. Flip the burgers, mound the brie on top, and grill for 4 minutes longer, until the cheese is slightly melted and the burgers are medium-rare.
- Spread the lemon mayonnaise on the cut sides of the buns; set the burgers on the bottoms and top with the bacon and onions. Close the burgers and serve right away.
